A simple recipe for the month of February; one of my favorites. In February, I love to indulge myself with good hearty salads. What better way than to start off with a good blue cheese dressing as a base? I like using a combination of lettuces , maybe red butter and frisee, add some blood orange segments or slices, some diced shallots, perhaps some diced ripe avocado ... but, hey, I'll provide the recipe for the dressing; you choose the ingredients!
Blue Cheese Dressing:
2 cups pure olive oil
1 cup red wine vinegar
2 tablespoons chopped garlic
4 oz. blue cheese
hand crumbled (preferably Blue D'Auvergne)
1/4 cup fresh lime juice
Place all in a blender or food processor mix until fully
emulsified
Then add:
1/4 minced shallots or red onion
